2 lb boneless, skinless chicken breasts
1 packet ranch seasoning mix
1 can cream of chicken soup
8 oz cream cheese, softened
½ cup chicken broth
½ teaspoon garlic powder
½ teaspoon black pepper
½ cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
2 tablespoons chopped fresh parsley, for garnish
Instructions
Place the chicken breasts in the bottom of a 6-quart slow cooker.
Sprinkle the ranch seasoning, garlic powder, and black pepper evenly over the chicken.
Add the cream of chicken soup and chicken broth.
Cut the softened cream cheese into cubes and place it over the chicken.
Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, until the chicken reaches 165°F internally.
Remove the chicken and shred or slice it. Return it to the slow cooker and stir everything together until creamy.
Stir in the shredded cheddar cheese and let it melt for about 5 minutes.
Top with crumbled bacon and fresh parsley.
Serve hot over mashed potatoes, rice, pasta, or with warm biscuits.
Notes
For a lighter version, you can use low-fat cream cheese.
This dish pairs well with a variety of sides like vegetables or salads.
Leftovers can be stored in the refrigerator for up to 3 days.
