  • 2 tablespoons olive oil
  • 14 ounces smoked turkey sausage, sliced into ¼-inch rounds
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 medium head green cabbage (about 2 pounds), chopped
  • 1 cup diced tomatoes, canned or fresh
  • 1 cup cooked long-grain white rice (optional, for a heartier meal)
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ¼ teaspoon crushed red pepper flakes (optional)
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • ½ cup low-sodium chicken broth
  • 2 tablespoons chopped fresh parsley (for garnish)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced turkey sausage and cook for 4–5 minutes, stirring occasionally, until browned. Remove the sausage from the pan and set aside.
  2. In the same pan, add the onion and bell pepper. Cook for 4–5 minutes, until softened. Stir in the garlic and cook for 30 seconds, until fragrant.
  3. Add the chopped cabbage to the skillet. Sprinkle with the smoked paprika, Cajun seasoning, garlic powder, onion powder, thyme, crushed red pepper flakes (if using), salt, and black pepper. Stir well and cook for 8–10 minutes, until the cabbage begins to soften.
  4. Stir in the diced tomatoes and chicken broth. Return the browned turkey sausage to the pan. Cover and simmer over medium-low heat for 10–12 minutes, until the cabbage is tender.
  5. If using cooked rice, stir it into the cabbage mixture and cook for 2–3 minutes until heated through.
  6. Garnish with chopped parsley and sliced green onions. Serve with cornbread, garlic bread, steamed rice, mashed potatoes, or a simple green salad.

  • This dish can be made ahead of time and reheated.
  • Feel free to adjust the seasonings to your taste.
