- 1 pound ground lamb
- 8 ounces egg noodles
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 green onions, sliced (for garnish)
- Fresh cilantro, chopped (for garnish)
- Cook the egg noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the ground lamb, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
- Add the ground cumin, ground coriander, and red pepper flakes to the skillet. Stir well to combine and cook for 1-2 minutes to toast the spices.
- Pour in the soy sauce, rice vinegar, and sesame oil. Stir to combine and let simmer for 2-3 minutes.
- Add the cooked egg noodles to the skillet and toss everything together until the noodles are well coated with the sauce and heated through.
- Serve hot, garnished with sliced green onions and chopped cilantro.
Notes
- For a spicier kick, add more red pepper flakes or a drizzle of sriracha before serving.
- You can substitute ground lamb with ground beef or turkey for a different flavor profile.
- For a vegetarian option, replace the meat with sautéed mushrooms and tofu.
