Ingredients
Scale
4 boneless, skinless chicken breasts (about 6 oz each)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped and drained
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh basil leaves (for garnish)
Extra grated Parmesan cheese (for garnish)
Instructions
Season the chicken: Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.
Sear the chicken: Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2–3 minutes per side until lightly golden. They do not need to be fully cooked.
Prepare the sauce: In a medium bowl, whisk together heavy cream, chopped sun-dried tomatoes, minced garlic, Parmesan cheese, Italian seasoning, red pepper flakes, salt, and black pepper.
Transfer to the slow cooker: Arrange the seared chicken breasts in the bottom of the Crock Pot in a single layer.
Add the sauce: Pour the creamy Parmesan mixture evenly over the chicken, making sure each piece is coated.
Slow cook: Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken reaches an internal temperature of 165°F.
Finish the sauce: Gently stir the sauce around the chicken. If it’s too thin, remove the chicken and simmer the sauce in a saucepan until slightly thickened.
Garnish: Sprinkle with fresh basil and additional Parmesan cheese.
Serve: Spoon plenty of creamy sun-dried tomato sauce over the chicken and serve warm.
Notes
Use oil-packed sun-dried tomatoes for a richer flavor.
Don’t skip searing the chicken; it adds extra depth and flavor.
Use freshly grated Parmesan for a smoother sauce.
Avoid cooking the chicken longer than necessary to keep it juicy.
For a thicker sauce, stir in a little cornstarch slurry near the end of cooking.
