Ingredients
Scale
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
½ cup all-purpose flour
½ cup cornstarch
1 tsp garlic powder
1 tsp smoked paprika
½ tsp onion powder
½ tsp salt
½ tsp black pepper
1 large egg
2 tbsp milk
1 cup panko breadcrumbs
Vegetable oil, for frying
1 cup pineapple chunks, drained and finely diced
1–2 fresh jalapeños, thinly sliced
½ small red onion, finely diced
1 tbsp fresh lime juice
2 tbsp chopped fresh cilantro
Pinch of salt
½ cup mayonnaise
¼ cup sour cream
1 tbsp fresh lime juice
1 tsp honey
1 small jalapeño, finely minced
½ tsp garlic powder
Pinch of salt
1–2 tsp water, if needed to thin the sauce
4 large burrito-size flour tortillas
4 small tostada shells
1 ½ cups shredded Monterey Jack or Mexican-blend cheese
1 cup shredded iceberg lettuce
½ cup diced tomatoes
1 avocado, sliced, optional
2 tbsp butter or oil, for toasting the wraps
Instructions
Prepare the Pineapple Jalapeño Filling: In a medium bowl, combine the diced pineapple, sliced jalapeños, red onion, lime juice, cilantro, and a pinch of salt. Toss gently until evenly mixed. Set aside for 10 minutes to allow the flavors to blend. Drain any excess liquid before assembling the wraps to prevent soggy tortillas.
Make the Creamy Jalapeño Sauce: In a small bowl, whisk together the mayonnaise, sour cream, lime juice, honey, minced jalapeño, garlic powder, and salt. Add a little water if you prefer a thinner sauce. Taste and adjust the lime juice, honey, or jalapeño to suit your preference. Refrigerate until ready to use.
Coat the Chicken: In a shallow bowl, mix the flour, cornstarch, garlic powder, smoked paprika, onion powder, salt, and black pepper. In a second bowl, whisk the egg and milk together. Place the panko breadcrumbs in a third bowl. Dip each chicken piece into the seasoned flour mixture, then into the egg mixture, and finally coat thoroughly with panko breadcrumbs. Press the breadcrumbs gently onto the chicken so they adhere well.
Fry the Chicken Until Crispy: Pour about 1 inch of vegetable oil into a deep skillet and heat to 350°F. Fry the chicken in small batches for approximately 4–6 minutes, turning as needed, until golden brown and cooked through. Check that the thickest pieces reach an internal temperature of 165°F. Transfer the chicken to a wire rack or paper towel-lined plate. Let excess oil drain while keeping the chicken uncovered to preserve its crispiness.
Prepare the Tortillas: Warm the large tortillas in a dry skillet or microwave briefly until flexible. Lay each tortilla flat on a clean work surface. Spread 1–2 tablespoons of creamy jalapeño sauce in the center. Add a portion of crispy chicken, followed by shredded cheese. Spoon the pineapple-jalapeño mixture over the chicken. Add shredded lettuce, diced tomatoes, and avocado if using. Place one tostada shell over the filling and add a little more sauce and cheese on top.
Fold the Crunch Wraps: Fold the edge of each large tortilla toward the center, working around the filling. Continue folding in overlapping sections until the filling is completely enclosed. If the tortilla does not fully cover the center, place a small piece of another tortilla over the opening before completing the folds. Gently press the folded wrap to help it hold its shape.
Toast Until Golden and Crunchy: Heat a large skillet over medium heat and add a little butter or oil. Place each wrap seam-side down in the skillet. Cook for 2–3 minutes until the bottom is golden brown and sealed. Carefully flip and cook for another 2–3 minutes until the other side is crisp and the cheese has melted. Repeat with the remaining wraps, adding a little more butter or oil as needed. Let each wrap rest for 1 minute before slicing in half.
Notes
Keep the chicken crispy: Drain fried chicken on a wire rack rather than covering it or stacking it while hot.
Drain the pineapple: Excess juice can make the tortilla soggy.
Control the spice: Remove the jalapeño seeds and membranes for milder heat, or add extra sliced jalapeños for more kick.
Use large tortillas: Burrito-size tortillas make folding much easier.
Seal seam-side down: Starting with the folded side against the skillet helps prevent the wrap from opening.
Add lettuce last: Keeping the lettuce away from the hottest ingredients helps it stay fresh and crunchy.
