Crispy golden chicken breasts filled with ham and melted Swiss cheese, served with a sweet and tangy honey-mustard dipping sauce.

4 boneless, skinless chicken breasts
4 slices deli ham
4 slices Swiss cheese
120 g all-purpose flour
2 large eggs
150 g panko breadcrumbs
½ tsp garlic powder
½ tsp paprika
½ tsp salt
½ tsp black pepper
2 tbsp olive oil
2 tbsp butter
80 g mayonnaise
60 g honey
2 tbsp Dijon mustard
1 tbsp yellow mustard
1 tsp lemon juice
Pinch of salt
Instructions
Place each chicken breast between two sheets of plastic wrap. Gently pound with a meat mallet until about 1–1.5 cm thick.
Season both sides of the chicken with salt, black pepper, garlic powder, and paprika.
Place one slice of ham and one slice of Swiss cheese over each chicken breast. Fold the chicken over to enclose the filling. Secure with toothpicks if needed.
Place the flour in one shallow bowl, beaten eggs in a second, and panko breadcrumbs mixed with a little salt, pepper, and paprika in a third.
Coat each stuffed chicken breast in flour, dip into the beaten egg, then press firmly into the panko breadcrumbs.
Heat the olive oil and butter in a large oven-safe skillet over medium heat. Cook the chicken for 3–4 minutes per side, until golden brown.
Transfer the skillet to a preheated 190°C oven and bake for 12–15 minutes, or until the chicken reaches an internal temperature of 74°C and the cheese is melted.
While the chicken cooks, whisk together mayonnaise, honey, Dijon mustard, yellow mustard, lemon juice, and salt.
Remove the toothpicks carefully and serve the crispy chicken hot with the honey-mustard sauce on the side.
Notes
Use panko breadcrumbs rather than regular breadcrumbs for extra crispiness.
Press the breadcrumbs firmly onto the chicken.
Don’t overcrowd the skillet.
For an even crispier finish, spray the breaded chicken lightly with cooking oil before baking.
