450 g ground pork
300 g green cabbage, finely shredded
100 g carrots, julienned or grated
100 g bean sprouts, optional
1 small onion, finely diced
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
½ tsp black pepper
½ tsp salt
2 green onions, finely sliced
1 tbsp cooking oil
15–20 egg roll wrappers
2 tbsp all-purpose flour
3 tbsp water
About 1 liter vegetable oil, or enough for deep-frying
Instructions
Heat 1 tbsp oil in a large skillet over medium-high heat. Add the ground pork and cook for 5–7 minutes, breaking it apart, until browned and cooked through.
Add the onion, garlic, and ginger. Cook for 1–2 minutes until fragrant.
Stir in the cabbage, carrots, and bean sprouts. Cook for 3–5 minutes, just until the vegetables soften slightly but still have some crunch.
Add soy sauce, oyster sauce, sesame oil, salt, and pepper. Stir well. Cook for another 1–2 minutes.
Remove from the heat and stir in the green onions. Transfer the filling to a bowl and let it cool completely. Drain any excess liquid so the egg rolls stay crispy.
Mix flour and water together to form a smooth paste.
Place an egg roll wrapper in a diamond shape. Put about 2–3 tbsp filling near the lower center. Fold the bottom corner over the filling, fold in both sides, then roll tightly toward the top. Brush the final corner with the flour paste to seal.
Heat vegetable oil to about 175°C.
Fry the egg rolls in batches for 3–5 minutes, turning occasionally, until golden brown and crispy. Avoid overcrowding the pan.
Transfer to a wire rack or paper towels to drain excess oil.

Ensure the filling is completely cooled before wrapping to maintain crispiness.

Store any leftover egg rolls in an airtight container in the refrigerator.
