Crispy Garlic Parmesan Chicken Thighs are a delicious and easy-to-make dish featuring juicy chicken thighs coated in a flavorful garlic Parmesan mixture, baked to perfection for a crispy skin.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs, about 2 pounds total
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried parsley
  • 4 tablespoons unsalted butter, melted
  • 5 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon juice (optional)
  • ¼ cup panko breadcrumbs (optional)
  • 2 tablespoons additional grated Parmesan cheese (optional)
  • 1 teaspoon olive oil (optional)

Instructions

  1. Preheat the oven to 425°F. Line a rimmed baking sheet with foil and place an oven-safe wire rack on top. Lightly grease the rack.
  2. Pat the chicken thighs dry with paper towels. Combine salt, black pepper, garlic powder, onion powder, Italian seasoning, smoked paprika, and dried parsley in a small bowl. Rub the chicken with olive oil and season evenly.
  3. Mix melted butter, minced garlic, Parmesan cheese, Italian seasoning, black pepper, fresh parsley, and optional lemon juice in a small bowl. Set aside.
  4. Arrange chicken thighs skin-side up on the prepared rack and bake for 25–30 minutes until the skin is golden and crisp.
  5. Remove the baking sheet and brush the garlic Parmesan mixture over the chicken. If using, combine panko breadcrumbs, extra Parmesan, and olive oil, and sprinkle over the chicken.
  6. Return the chicken to the oven and bake for another 10–15 minutes until the thickest part reaches at least 165°F. Broil for 1–2 minutes if needed for extra color.
  7. Let the chicken rest for 5 minutes before serving. Garnish with extra Parmesan and fresh parsley if desired.

Notes

  • Dry the skin thoroughly for extra crispiness.
  • Use freshly grated Parmesan for better melting and browning.
  • Keep the skin exposed to maintain crispiness.
  • Don’t crowd the pan to allow hot air circulation.
  • Use a thermometer to ensure chicken is cooked through.
  • Broil carefully to avoid burning the garlic and Parmesan.
