1 1/2 lbs boneless, skinless chicken breasts
1/2 cup all-purpose flour
1 tsp paprika
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
2 tbsp butter
6 slices bacon, cooked and crumbled
4 oz cream cheese, softened
1 cup chicken broth
1/2 cup heavy cream
1 cup shredded cheddar cheese
1 packet (1 oz) ranch seasoning mix
2 cloves garlic, minced
1/2 tsp black pepper
2 green onions, sliced
Instructions
Slice the chicken breasts in half horizontally to create thinner pieces. Pat dry.
In a shallow bowl, combine flour, paprika, garlic powder, onion powder, salt, and black pepper. Coat each piece of chicken evenly.
Heat olive oil and butter in a large skillet over medium-high heat. Cook the chicken for 4–5 minutes per side, until golden and cooked through. Transfer to a plate.
Reduce the heat to medium. Add the garlic and cook for about 30 seconds.
Pour in the chicken broth and scrape up the browned bits from the bottom of the skillet.
Add cream cheese and heavy cream. Whisk until smooth.
Stir in ranch seasoning, cheddar cheese, and black pepper. Simmer for 2–3 minutes, until thick and creamy.
Stir in most of the bacon and green onions.
Return the crispy chicken to the skillet and spoon the sauce over the top. Simmer gently for 1–2 minutes.
Sprinkle with the remaining bacon and green onions before serving.
Notes
For the crispiest chicken, don’t overcrowd the skillet while searing.
Serve immediately so the golden coating stays crisp.
