1 pound boneless, skinless chicken breasts
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
1/4 cup all-purpose flour
2 large eggs
1 tablespoon olive oil
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 425°F. Line a baking sheet with parchment paper.
In a shallow bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, black pepper, and paprika. Mix well.
In another shallow bowl, place the flour. In a third bowl, beat the eggs.
Pat the chicken breasts dry with paper towels. Dredge each piece in flour, shaking off the excess. Dip into the beaten eggs, then coat thoroughly with the breadcrumb mixture.
Place the coated chicken breasts on the prepared baking sheet. Drizzle olive oil over the top of each piece.
Bake in the preheated oven for 15-20 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F).
Remove from the oven and let rest for a few minutes. Garnish with chopped parsley before serving.
Notes
For extra flavor, add Italian seasoning or crushed red pepper flakes to the breadcrumb mixture.
Substitute chicken breasts with chicken thighs for a juicier option.
