4 salmon fillets, about 170–200 g each
1 tbsp (15 ml) olive oil
1 tsp paprika
½ tsp garlic powder
½ tsp salt
½ tsp black pepper
2 tbsp (28 g) butter
4 cloves garlic, minced
½ medium onion, finely diced
100 g sun-dried tomatoes, sliced
120 g fresh spinach
240 ml heavy cream
120 ml chicken broth
60 g grated Parmesan cheese
½ tsp Italian seasoning
¼ tsp red pepper flakes, optional
1 tbsp fresh parsley, chopped
Salt and black pepper, to taste
Instructions
Season the salmon. Pat the fillets dry, then season both sides with paprika, garlic powder, salt, and black pepper.
Sear the salmon. Heat olive oil in a large oven-safe skillet over medium-high heat. Place salmon skin-side down and cook for about 4–5 minutes until golden and crisp. Flip and cook another 2–3 minutes. Remove the salmon and set aside.
Start the sauce. Reduce the heat to medium. Add butter and sauté the onion for 2–3 minutes. Add garlic and cook for another 30 seconds.
Add the sun-dried tomatoes and cook for about 1 minute.
Pour in the chicken broth and heavy cream. Stir in Italian seasoning and red pepper flakes. Simmer gently for 3–4 minutes.
Stir in the Parmesan cheese until melted and the sauce becomes creamy.
Add the spinach and cook for 1–2 minutes, just until wilted.
Return the salmon to the skillet. Spoon some of the creamy sauce over the fillets.
Simmer gently for another 3–5 minutes, or until the salmon reaches an internal temperature of 63°C (145°F).
Garnish with fresh parsley and extra Parmesan.
Notes
Optional: Add a small squeeze of fresh lemon juice right before serving to enhance the flavor.
Best served with roasted potatoes, rice, pasta, or crusty bread to soak up the creamy sauce.
