Creamy Tuscan Chicken with Burst Tomatoes is a delightful dish that combines tender chicken breasts with a rich and creamy tomato sauce, bursting with flavor from fresh ingredients.

  • 4 boneless, skinless chicken breasts — about 680 g
  • 1 teaspoon (5 mL) salt
  • ½ teaspoon (2.5 mL) black pepper
  • 1 teaspoon (5 mL) paprika
  • ½ teaspoon (2.5 mL) Italian seasoning
  • 2 tablespoons (30 mL) olive oil
  • 2 tablespoons (30 g) unsalted butter
  • 2 cups (300 g) cherry tomatoes
  • 4 cloves garlic, minced
  • 1 cup (240 mL) heavy cream
  • ½ cup (120 mL) chicken broth
  • ½ cup (50 g) grated Parmesan cheese
  • ½ teaspoon (2.5 mL) Italian seasoning
  • ¼ teaspoon (1.25 mL) red pepper flakes, optional
  • ½ cup (15 g) fresh spinach, chopped
  • 1 tablespoon (15 mL) fresh lemon juice
  • 2 tablespoons chopped fresh basil or parsley

Instructions

  1. Pat the chicken breasts dry. Season both sides with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes per side, until golden brown. Transfer to a plate.
  3. Add the cherry tomatoes to the same skillet. Cook for 4–5 minutes, stirring occasionally, until they begin to blister and burst.
  4. Stir in the minced garlic and cook for about 30 seconds, until fragrant.
  5. Pour in the chicken broth and scrape up the browned bits from the bottom of the pan. Add the heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Simmer gently for 3–5 minutes, until slightly thickened.
  6. Stir in the chopped spinach and cook for 1–2 minutes, until wilted. Add the lemon juice.
  7. Place the chicken breasts back into the skillet. Spoon the creamy tomato sauce over them and simmer for 3–5 minutes, or until the chicken reaches 165°F (74°C) internally.
  8. Sprinkle with fresh basil or parsley and extra Parmesan.
  9. Serve the creamy chicken and burst tomatoes over garlic butter rice, pasta, mashed potatoes, or crusty bread.

  • For a spicier dish, increase the amount of red pepper flakes.
