A simple yet delicious recipe for creamy Parmesan chicken that is sure to impress your family and friends.

  • 4 boneless, skinless chicken breasts, about 600–700 g total
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • 30 g all-purpose flour
  • 2 tablespoons olive oil
  • 30 g butter
  • 4 cloves garlic, minced
  • 250 ml chicken broth
  • 250 ml heavy cream
  • 80 g finely grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • 60 g baby spinach, optional
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Pat the chicken breasts dry. If they are very thick, carefully slice them horizontally or pound them to an even thickness. Season both sides with salt, pepper, garlic powder, and Italian seasoning. Lightly coat the chicken with flour, shaking off the excess.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 4–5 minutes per side, until golden brown. Transfer the chicken to a plate. It does not need to be completely cooked through yet.
  3. Reduce the heat to medium. Add the butter to the same skillet. Add the minced garlic and cook for about 30–60 seconds, just until fragrant. Don’t let the garlic burn.
  4. Pour in the chicken broth and scrape the browned bits from the bottom of the pan. Simmer for 2–3 minutes. Reduce the heat to medium-low and add the heavy cream, Italian seasoning, paprika, and black pepper. Simmer gently for 3–4 minutes. Gradually stir in the Parmesan cheese until melted and the sauce becomes smooth and creamy.
  5. Return the chicken and any juices from the plate to the skillet. Spoon the sauce over the chicken. Cover and simmer gently for 5–8 minutes, or until the chicken reaches an internal temperature of 74°C.
  6. If using spinach, stir it into the sauce during the final 1–2 minutes of cooking. Taste and adjust the salt and pepper as needed.
  7. Garnish with fresh parsley and extra Parmesan.
