- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 ounces pancetta or bacon, diced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 package (9 ounces) refrigerated cheese ravioli
- 1 cup frozen peas
- 2 tablespoons fresh parsley, chopped (for garnish)
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and diced pancetta or bacon. Cook until the meat is crispy, about 5-7 minutes.
- Reduce the heat to low and pour in the heavy cream, stirring to combine.
- Gradually add the grated Parmesan cheese, stirring until melted and the sauce is creamy. Season with black pepper and salt.
- In a separate pot, cook the cheese ravioli according to package instructions. Drain and add to the skillet with the sauce.
- Stir in the frozen peas and cook for an additional 2-3 minutes until heated through.
- Garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream and use turkey bacon instead of pancetta.
- You can also add sautéed mushrooms or spinach for extra flavor and nutrition.
