2 cups cooked chicken, shredded or diced
3 cups fresh broccoli florets
1 cup cooked rice (white or brown)
1 can (10.5 ounces) cream of chicken soup
1 cup sour cream
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup breadcrumbs (optional, for topping)
1 tablespoon olive oil (if using breadcrumbs)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or a little olive oil.
In a large mixing bowl, combine the cooked chicken, broccoli florets, cooked rice, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Pour the mixture into the prepared baking dish and spread it evenly.
If using breadcrumbs, mix them with olive oil in a small bowl until they are coated. Sprinkle the breadcrumb mixture evenly over the casserole.
Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
Remove from the oven and let it cool for about 5 minutes before serving.
Notes
For a healthier twist, substitute Greek yogurt for sour cream.
Add other vegetables like bell peppers or carrots for extra flavor and nutrition.
