Cranberry Orange Breakfast Muffins with Holiday Glow delight every bite!

Ingredients

  • 2 cups all-purpose flour
  • 1 cup fresh or frozen cranberries, chopped
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup orange juice
  • 1/4 cup milk
  • 2 large eggs
  • 1 tablespoon orange zest
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup powdered sugar (for glaze, optional)
  • 12 tablespoons orange juice (for glaze, optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs, orange juice, and orange zest to the butter mixture, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  6. Gently fold in the chopped cranberries and nuts, if using.
  7. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  10. If desired, mix powdered sugar with orange juice to create a glaze and drizzle it over the cooled muffins.

Notes

  • For a healthier twist, substitute half of the all-purpose flour with whole wheat flour and reduce the sugar to 3/4 cup.
  • Add a teaspoon of vanilla extract to the wet ingredients for an extra layer of flavor.
