- 2 cups all-purpose flour
- 1 cup fresh or frozen cranberries, chopped
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup orange juice
- 1/4 cup milk
- 2 large eggs
- 1 tablespoon orange zest
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup powdered sugar (for glaze, optional)
- 1–2 tablespoons orange juice (for glaze, optional)
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, orange juice, and orange zest to the butter mixture, and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
- Gently fold in the chopped cranberries and nuts, if using.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- If desired, mix powdered sugar with orange juice to create a glaze and drizzle it over the cooled muffins.
Notes
- For a healthier twist, substitute half of the all-purpose flour with whole wheat flour and reduce the sugar to 3/4 cup.
- Add a teaspoon of vanilla extract to the wet ingredients for an extra layer of flavor.
