Crab Cake Stuffed Bell Peppers are a delightful dish that combines the flavors of crab cakes with the freshness of bell peppers, making for a delicious and visually appealing meal.

  • 4 large bell peppers (red, yellow, or orange), halved lengthwise and seeded
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 lb (450 g) lump crab meat, picked over for shells
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • ¼ cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp Old Bay seasoning
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 cloves garlic, minced
  • 2 tbsp finely diced celery
  • 2 tbsp finely diced red bell pepper
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped green onions
  • ½ cup shredded mozzarella cheese (optional, for a gooey center)
  • 4 oz (115 g) cream cheese, softened (optional, for extra creaminess)
  • ½ tsp paprika
  • ¼ tsp black pepper
  • ¼ cup panko breadcrumbs (for topping)
  • 2 tbsp grated Parmesan cheese (for topping)
  • 1 tbsp melted butter (for topping)
  • ½ tsp Old Bay seasoning (for topping)
  • 1 tbsp chopped parsley (for topping)
  • ½ cup mayonnaise (for sauce)
  • 2 tbsp sour cream (for sauce)
  • 1 tbsp lemon juice (for sauce)
  • 1 tsp Cajun seasoning (for sauce)
  • ½ tsp smoked paprika (for sauce)
  • 1 tsp hot sauce (optional, for sauce)
  • 1 clove garlic, grated (for sauce)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly brush the pepper halves with olive oil and season with salt and pepper. Arrange them cut-side up in a lightly greased baking dish.
  2. In a large bowl, whisk together the egg, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, garlic powder, onion powder, paprika, and black pepper. Stir in the celery, diced bell pepper, garlic, parsley, green onions, Parmesan, panko, mozzarella (if using), and cream cheese (if using). Gently fold in the lump crab meat, being careful not to break it up too much.
  3. Spoon the crab mixture generously into each pepper half, mounding it slightly.
  4. Mix the panko, Parmesan, melted butter, Old Bay seasoning, and parsley. Sprinkle evenly over each stuffed pepper.
  5. Cover the baking dish loosely with foil and bake for 20 minutes. Remove the foil and continue baking for 10–15 minutes, or until the peppers are tender and the topping is golden brown. For an extra crispy top, broil for 1–2 minutes, watching closely.
  6. Whisk together the mayonnaise, sour cream, lemon juice, Cajun seasoning, smoked paprika, hot sauce, and grated garlic until smooth.
  7. Drizzle the Cajun sauce over the stuffed peppers or serve it on the side. Garnish with chopped parsley and a squeeze of fresh lemon juice.
