A hearty and delicious Cowboy Tater Beef Casserole that combines ground beef, beans, corn, and tater tots for a comforting meal.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (10.5 ounces) diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 cups frozen tater tots
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, sliced (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  4. Stir in the corn, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld.
  5. In a greased 9×13 inch baking dish, spread the beef mixture evenly across the bottom.
  6. Layer the frozen tater tots on top of the beef mixture.
  7. Sprinkle the shredded cheddar cheese over the tater tots.
  8. Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
  9. Remove from the oven and let cool for a few minutes. Drizzle sour cream over the top and garnish with sliced green onions before serving.

  • For a spicier version, add diced jalapeños or a dash of hot sauce to the beef mixture.
  • Substitute ground turkey or chicken for a leaner option, and consider using sweet potato tater tots for a healthier twist.
