Ingredients

Scale
  • 1½ lbs sirloin steak or ribeye
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp red pepper flakes
  • ½ tsp black pepper
  • ¼ tsp salt
  • 12 Hawaiian rolls or slider buns
  • 6 slices provolone cheese
  • 6 slices mozzarella or cheddar cheese
  • 2 tbsp unsalted butter, melted
  • 1 tbsp chopped fresh parsley
  • ½ tsp garlic powder

Instructions

  1. Prepare the steak. Pat the steak dry and rub it with olive oil. Combine smoked paprika, garlic powder, onion powder, salt, and black pepper, then season both sides generously.
  2. Make the cowboy butter. In a bowl, mix softened butter with garlic, Dijon mustard, lemon juice, parsley, smoked paprika, cayenne, red pepper flakes, black pepper, and salt. Set aside.
  3. Cook the steak. Heat a large skillet or grill over medium-high heat. Cook the steak for about 4–5 minutes per side, depending on thickness and desired doneness. Remove and let rest for 5–10 minutes.
  4. Slice the steak thinly against the grain. Toss the warm slices with about 2 tablespoons of the cowboy butter.
  5. Assemble the sliders. Preheat the oven to 350°F. Without separating the rolls, slice the entire package horizontally. Place the bottom half in a greased baking dish.
  6. Layer the provolone and mozzarella over the buns, followed by the sliced steak. Spread another layer of cowboy butter over the steak, then place the top buns over everything.
  7. Make the topping. Combine melted butter, parsley, and garlic powder. Brush generously over the tops of the rolls.
  8. Bake uncovered for 12–15 minutes, until the cheese is melted and the tops are golden brown.
  9. Serve. Let the sliders cool for a couple of minutes, then cut apart and serve with extra cowboy butter for dipping.

Notes

  • Letting the steak rest before slicing keeps the meat juicy.
  • Slicing against the grain makes the steak much more tender in the sliders.
