Ingredients

Scale
  • 2 lbs chicken wings
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper, or to taste
  • 1 tsp dried parsley
  • 1/2 tsp dried thyme
  • 1/2 tsp dried chives
  • 1/4 tsp black pepper
  • 1 tbsp finely chopped fresh parsley

Instructions

  1. Preheat oven to 425°F. Pat the chicken wings very dry with paper towels.
  2. Toss the wings with olive oil, garlic powder, smoked paprika, onion powder, salt, and black pepper.
  3. Arrange in a single layer on a wire rack set over a baking sheet.
  4. Bake for 40–45 minutes, flipping halfway through, until golden and crispy and the chicken reaches 165°F internally.
  5. While the wings cook, combine melted butter, garlic, Dijon mustard, lemon juice, lemon zest, paprika, cayenne, parsley, thyme, chives, and black pepper.
  6. Transfer the hot wings to a large bowl. Pour the cowboy butter over them and toss until thoroughly coated.
  7. Sprinkle with fresh parsley and serve immediately.

Notes

  • For extra-crispy wings, refrigerate the seasoned uncovered wings for 1–2 hours before baking to help dry the skin.
