Ingredients
Scale
1 lb ground chicken
1/2 cup cottage cheese
1/2 cup breadcrumbs
1 large egg
1/2 cup shredded cheddar cheese
2 cloves garlic, minced
1 tsp onion powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1/3 cup buffalo hot sauce
2 tbsp unsalted butter, melted
1 tbsp honey
1 tsp garlic powder
Instructions
Preheat the oven. Set your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.
Mix the ingredients. In a large bowl, combine the ground chicken, cottage cheese, breadcrumbs, egg, cheddar cheese, garlic, onion powder, paprika, salt, and black pepper. Mix until just combined.
Shape the meatballs. Form the mixture into approximately 16–20 meatballs and arrange them on the prepared baking sheet.
Bake. Bake for 18–22 minutes, or until the meatballs are cooked through and reach an internal temperature of 165°F.
Prepare the sauce. While the meatballs bake, whisk together the buffalo hot sauce, melted butter, honey, and garlic powder in a small bowl.
Coat the meatballs. Toss the cooked meatballs in the buffalo sauce until evenly coated.
Finish and serve. Return the coated meatballs to the oven for another 3–5 minutes if desired. Serve warm with ranch or blue cheese dressing, celery sticks, or your favorite side dish.
Notes
Blend the cottage cheese first if you prefer a smoother texture.
Avoid overmixing the chicken mixture to keep the meatballs tender.
Add more buffalo sauce for extra heat or more honey for a sweeter flavor.
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
