  • 4 slices Monterey Jack cheese
  • 4 slices cheddar cheese
  • ¼ cup mayonnaise (optional)
  • 2 tablespoons honey (optional)
  • 1 tablespoon Dijon mustard (optional)
  • 1 teaspoon yellow mustard (optional)
  • ½ teaspoon lemon juice (optional)

Instructions

  1. Preheat the oven to 375°F. Lightly grease a baking dish.
  2. If the chicken breasts are thick, pound them to an even thickness.
  3. Season both sides of the chicken with salt, pepper, garlic powder, and paprika.
  4. Heat the olive oil and butter in a large oven-safe skillet over medium-high heat. Sear the chicken for 3–4 minutes per side, until golden brown.
  5. Transfer the chicken to the prepared baking dish if your skillet isn’t oven-safe.
  6. In the same skillet, melt 1 tablespoon butter. Add the onions and mushrooms. Cook for 5–7 minutes, until softened and lightly browned.
  7. Add the garlic, salt, and black pepper. Cook for another 30 seconds.
  8. Spoon the mushroom and onion mixture over each chicken breast. Sprinkle with crumbled bacon.
  9. Place a slice of Monterey Jack and a slice of cheddar over each chicken breast.
  10. Bake for 12–18 minutes, or until the chicken reaches an internal temperature of 165°F and the cheese is melted and bubbly.
