Ingredients

Scale
  • 8 slices of rye bread
  • 8 ounces of corned beef, sliced
  • 8 ounces of sauerkraut, drained
  • 8 ounces of Swiss cheese, sliced
  • 4 tablespoons of Russian or Thousand Island dressing
  • 4 tablespoons of unsalted butter, softened

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread 1 tablespoon of softened butter on one side of each slice of rye bread.
  3. On the unbuttered side of 4 slices of bread, spread 1 tablespoon of dressing.
  4. Layer the corned beef evenly over the dressing on each of the 4 slices.
  5. Add a generous portion of sauerkraut on top of the corned beef.
  6. Place 2 slices of Swiss cheese on top of the sauerkraut.
  7. Top with the remaining 4 slices of bread, buttered side up.
  8. Carefully place the sandwiches in the preheated skillet. Cook for about 4-5 minutes until golden brown.
  9. Flip the sandwiches and cook for another 4-5 minutes until the cheese is melted and the other side is golden brown.
  10. Remove from the skillet, slice in half, and serve hot.

Notes

  • For a healthier option, use whole grain bread instead of rye and low-fat cheese.
  • Add sliced pickles or jalapeños for an extra kick of flavor.
