  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 1 tablespoon ketchup (for topping)
  • 1 tablespoon olive oil
  • 1 cup mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 teaspoon soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, milk, eggs, Worcestershire sauce, garlic powder, salt, black pepper, thyme, and oregano. Mix until just combined, being careful not to overmix.
  3. Transfer the meat mixture to a loaf pan and shape it into a loaf. Spread the ketchup evenly over the top.
  4. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
  5. While the meatloaf is baking, prepare the mushroom gravy. In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté until they are browned and tender, about 5-7 minutes.
  6. Sprinkle the flour over the mushrooms and stir to combine. Cook for 1 minute, then gradually whisk in the beef broth and soy sauce.
  7. Bring to a simmer and cook until the gravy thickens, about 3-5 minutes. Season with salt and pepper to taste.
  8. Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve with the mushroom gravy drizzled over the top.

  • For a healthier option, substitute ground turkey or chicken for the beef.
