1½ lb cooked lobster meat, chopped into bite-size pieces
¼ cup mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon finely chopped fresh chives
1 tablespoon finely chopped celery
1 teaspoon Dijon mustard
¼ teaspoon salt
¼ teaspoon black pepper
4 split-top hot dog buns
2 tablespoons unsalted butter, softened
1 tablespoon fresh parsley, chopped
Lemon wedges, for serving
Instructions
In a bowl, combine the lobster meat, mayonnaise, lemon juice, chives, celery, Dijon mustard, salt, and black pepper. Gently toss until evenly coated.
Cover and refrigerate for 15–30 minutes to allow the flavors to blend.
Spread the softened butter over the outside of each hot dog bun.
Heat a skillet over medium heat. Toast the buns for 2–3 minutes per side, until golden brown and lightly crisp.
Divide the lobster mixture evenly among the toasted buns.
Sprinkle with fresh parsley and serve immediately with lemon wedges.
Notes
For a Connecticut-style lobster roll, skip the mayonnaise mixture and toss the warm lobster meat with melted butter, a little lemon juice, salt, and pepper instead.
