A delicious and flavorful Chicken Rollatini recipe featuring chicken breasts rolled with a creamy cheese filling and baked in marinara sauce.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 jar (24 ounces) marinara sauce
  • 1 tablespoon olive oil
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. Place each chicken breast between two sheets of plastic wrap and pound them to about 1/4 inch thickness using a meat mallet or rolling pin.
  3. In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, chopped spinach, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  4. Spread an equal amount of the cheese mixture onto each chicken breast, leaving a small border around the edges.
  5. Carefully roll each chicken breast tightly and secure with toothpicks or kitchen twine.
  6. In a large oven-safe skillet, heat olive oil over medium heat. Add the chicken rolls and sear them for about 3-4 minutes on each side until golden brown.
  7. Pour marinara sauce over the chicken rolls in the skillet, then sprinkle the remaining mozzarella cheese on top.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
  9. Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh basil leaves if desired.

  • For a spicier version, add crushed red pepper flakes to the cheese mixture.
