Chicken Parmesan Roll-Ups are a delightful dish featuring tender chicken breasts filled with a creamy cheese mixture, coated in breadcrumbs, and baked in marinara sauce.

  • 4 boneless, skinless chicken breasts, about 680 g total
  • 1 teaspoon (5 mL) Italian seasoning
  • ½ teaspoon (2.5 mL) garlic powder
  • ½ teaspoon (2.5 mL) salt
  • ½ teaspoon (2.5 mL) black pepper
  • 60 g all-purpose flour
  • 2 large eggs
  • 120 g Italian-seasoned breadcrumbs
  • 60 g grated Parmesan cheese
  • 2 tablespoons (30 mL) olive oil
  • 115 g cream cheese, softened
  • 120 g shredded mozzarella cheese
  • 40 g grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon (15 g) chopped fresh parsley
  • ½ teaspoon (2.5 mL) Italian seasoning
  • 360 mL marinara sauce
  • 120 g shredded mozzarella cheese
  • 30 g grated Parmesan cheese
  • Fresh parsley or basil, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Place each chicken breast between two sheets of plastic wrap and pound to about 6 mm (¼ inch) thick.
  2. Season both sides with Italian seasoning, garlic powder, salt, and black pepper.
  3. Mix the cream cheese, mozzarella, Parmesan, garlic, parsley, and Italian seasoning until smooth.
  4. Spread a thin layer of the cheese mixture over each chicken breast, leaving a small border around the edges. Roll each piece tightly from one short end to the other. Secure with toothpicks if needed.
  5. Place flour in one shallow bowl. Beat the eggs in a second bowl. In a third bowl, combine breadcrumbs and Parmesan.
  6. Dip each chicken roll-up into the flour, then egg, then breadcrumb mixture, coating evenly.
  7. Heat olive oil in a large oven-safe skillet over medium-high heat. Brown the roll-ups for about 2 minutes per side.
  8. Pour the marinara sauce around and partially over the chicken. Sprinkle mozzarella and Parmesan over the top.
  9. Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken reaches 165°F (74°C) internally and the cheese is melted and golden.
  10. Remove the toothpicks carefully and let the chicken rest for 5 minutes.
  11. Garnish with fresh parsley or basil and serve.
