1 pound boneless, skinless chicken breasts, sliced into thin strips
2 cups fresh green beans, trimmed
2 tablespoons vegetable oil
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1/4 cup soy sauce
2 tablespoons honey
1 tablespoon cornstarch
1/4 cup chicken broth
1 teaspoon sesame oil
Salt and pepper to taste
Cooked rice or noodles, for serving
Instructions
In a small bowl, mix the soy sauce, honey, cornstarch, chicken broth, and sesame oil. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
Add the green beans to the skillet and stir-fry for about 3-4 minutes until they are bright green and tender-crisp.
Return the cooked chicken to the skillet and pour the sauce over the chicken and green beans. Stir well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
Serve the stir fry over cooked rice or noodles.
Notes
For added crunch, toss in some sliced bell peppers or carrots along with the green beans.
Substitute the chicken with shrimp or tofu for a different protein option.
