450 g boneless, skinless chicken breast, diced
15 mL (1 tablespoon) soy sauce
5 mL (1 teaspoon) sesame oil
¼ teaspoon (1.25 mL) black pepper
15 g (1 tablespoon) butter
1 medium onion, sliced
2 cloves garlic, minced
300 g cabbage, chopped
1 bell pepper, sliced
1 medium carrot, julienned
15 mL (1 tablespoon) oyster sauce, optional
15 mL (1 tablespoon) soy sauce
½ teaspoon (2.5 mL) black pepper
½ teaspoon (2.5 mL) salt
¼ teaspoon (1.25 mL) crushed red pepper flakes, optional
1 teaspoon (5 mL) cornstarch
30 mL (2 tablespoons) water
2–3 green onions, sliced, for garnish
Instructions
Marinate the chicken: In a bowl, combine the diced chicken, 1 tablespoon soy sauce, sesame oil, and black pepper. Let it sit for 10–15 minutes.
Prepare the sauce: Mix the remaining soy sauce, oyster sauce, black pepper, salt, red pepper flakes, and cornstarch slurry (cornstarch mixed with water). Set aside.
Cook the chicken: Heat a large skillet or wok over medium-high heat. Add the butter, then add the chicken. Stir-fry for 4–5 minutes, until golden and cooked through. Transfer to a plate.
Sauté the aromatics: Add a little more butter if needed. Cook the onion and garlic for about 2 minutes, until fragrant.
Cook the vegetables: Add the cabbage, bell pepper, and carrot. Stir-fry for 5–6 minutes, keeping the vegetables slightly crisp.
Combine: Return the cooked chicken to the skillet and toss everything together.
Add the sauce: Pour in the prepared sauce and stir continuously for 2–3 minutes, until the sauce becomes glossy and lightly thickened.
Finish: Taste and adjust the seasoning if needed. Sprinkle generously with sliced green onions.
Serve: Serve hot over steamed jasmine rice, noodles, or enjoy on its own for a lighter meal.
Notes
For a spicier dish, increase the amount of crushed red pepper flakes.
Feel free to add other vegetables like broccoli or snap peas.
This dish can be made in advance and reheated for a quick meal.
