- 2 cups cooked ground beef or turkey
- 1 packet taco seasoning mix
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 package (8 ounces) tortilla chips
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro (optional)
- 1 jalapeño, sliced (optional)
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
- Stir in the taco seasoning mix, black beans, corn, diced tomatoes, and salsa. Cook for about 5 minutes, stirring occasionally, until heated through.
- In a greased 9×13-inch baking dish, layer half of the tortilla chips on the bottom.
- Spread half of the meat mixture over the chips, then sprinkle with half of the cheddar and Monterey Jack cheeses.
- Repeat the layers with the remaining tortilla chips, meat mixture, and cheeses.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for 5 minutes. Top with sour cream, cilantro, and jalapeño slices if desired before serving.
Notes
- For a vegetarian option, substitute the ground meat with sautéed mushrooms or additional beans.
- Add sliced olives or diced bell peppers to the meat mixture for extra flavor and texture.
