A delicious and easy-to-make Cheesy Taco Bake that your family will love!

Ingredients

  • 2 cups cooked ground beef or turkey
  • 1 packet taco seasoning mix
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 package (8 ounces) tortilla chips
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 jalapeño, sliced (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
  3. Stir in the taco seasoning mix, black beans, corn, diced tomatoes, and salsa. Cook for about 5 minutes, stirring occasionally, until heated through.
  4. In a greased 9×13-inch baking dish, layer half of the tortilla chips on the bottom.
  5. Spread half of the meat mixture over the chips, then sprinkle with half of the cheddar and Monterey Jack cheeses.
  6. Repeat the layers with the remaining tortilla chips, meat mixture, and cheeses.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for 5 minutes. Top with sour cream, cilantro, and jalapeño slices if desired before serving.

Notes

  • For a vegetarian option, substitute the ground meat with sautéed mushrooms or additional beans.
  • Add sliced olives or diced bell peppers to the meat mixture for extra flavor and texture.
