2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
8 ounces mushrooms, sliced
1 cup spinach, chopped
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup chicken broth
1 teaspoon dried Italian herbs
Instructions
Heat olive oil in a large skillet over medium heat.
Add the chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
Add the sliced mushrooms to the skillet and cook for another 3-4 minutes until they are tender.
Stir in the chopped spinach and cook until wilted, about 2 minutes.
Pour in the chicken broth and sprinkle the dried Italian herbs over the mixture. Bring to a simmer and let it cook for 2-3 minutes to reduce slightly.
Reduce the heat to low and sprinkle the mozzarella and Parmesan cheese over the chicken and mushrooms. Cover the skillet with a lid and let it cook for an additional 2-3 minutes, until the cheese is melted and bubbly.
Serve hot, garnished with fresh herbs if desired.
Notes
For a creamier texture, add 1/4 cup of heavy cream when you add the chicken broth.
For a low-carb option, substitute the mushrooms with zucchini noodles or cauliflower rice.
