A delicious and easy-to-make Cheesy Shrimp Sandwich that combines succulent shrimp with melted cheddar cheese, fresh vegetables, and a zesty mayo dressing.

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 slices of cheddar cheese
  • 4 hoagie rolls
  • 1 cup shredded lettuce
  • 1 medium tomato, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley

Instructions

  1. In a large bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  2. Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque.
  3. Once the shrimp are cooked, place a slice of cheddar cheese on top of each portion in the skillet. Cover the skillet with a lid for about 1 minute, allowing the cheese to melt.
  4. While the cheese is melting, mix the mayonnaise and lemon juice in a small bowl.
  5. To assemble the sandwiches, spread the mayo mixture on the inside of each hoagie roll.
  6. Layer the shredded lettuce, sliced tomato, and cheesy shrimp on the rolls.
  7. Garnish with chopped parsley and close the sandwiches. Serve immediately.

Notes

  • For a spicy kick, add a few dashes of hot sauce to the mayonnaise mixture or sprinkle some crushed red pepper flakes on the shrimp while cooking.
  • Substitute the cheddar cheese with pepper jack or mozzarella for a different flavor profile. You can also add avocado slices for extra creaminess.
