700 g potatoes, cut into bite-size cubes
450 g smoked sausage or kielbasa, sliced
1 small onion, chopped
2 tbsp olive oil
1 packet (about 28 g) ranch seasoning mix
½ tsp garlic powder
½ tsp smoked paprika
¼ tsp black pepper
½ tsp salt, or to taste
200 g shredded cheddar cheese
100 g shredded mozzarella cheese
120 g sour cream, for serving
2 tbsp chopped fresh chives or green onions
Instructions
Preheat your oven to 200°C. Lightly grease a large baking dish or sheet pan.
Place the cubed potatoes in a large bowl. Add olive oil, ranch seasoning, garlic powder, smoked paprika, black pepper, and salt. Toss until evenly coated.
Add the sliced sausage and chopped onion. Toss everything together.
Spread the mixture in a single layer on the prepared pan. Roast for 30–35 minutes, stirring halfway through, until the potatoes are tender and beginning to brown.
Sprinkle the cheddar and mozzarella evenly over the potatoes and sausage.
Return to the oven for 5–10 minutes, until the cheese is completely melted and bubbling.
Sprinkle with fresh chives or green onions.
Serve hot with a spoonful of sour cream on top or on the side.
Notes
Add diced bell peppers for extra color and flavor.
Mix in cooked bacon for a bacon-ranch version.
Add sliced jalapeños for some heat.
Use pepper Jack instead of mozzarella for a spicy cheesy topping.
Add broccoli during the final 15 minutes of roasting.
Cut the potatoes into similarly sized pieces so they cook evenly.
For especially crispy potatoes, spread them out in a single layer and avoid overcrowding the pan.
