Ingredients
Scale
For the Caramelized Onions
2 large yellow onions, thinly sliced
2 tbsp unsalted butter
1 tbsp olive oil
¼ tsp salt
1 tsp Worcestershire sauce, optional
For the Beef Patties
1 lb ground beef (80/20 preferred)
1 tsp Worcestershire sauce
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
½ tsp ground black pepper
1 tbsp vegetable oil, if needed for cooking
For the Sandwiches
8 slices rye bread or thick-cut sourdough
8 slices Swiss cheese
4 slices cheddar cheese
4 tbsp softened unsalted butter
Optional Patty Melt Sauce
¼ cup mayonnaise
1 tbsp ketchup
1 tsp yellow mustard
1 tbsp finely chopped dill pickles
½ tsp smoked paprika
Instructions
Caramelize the onions. Heat the butter and olive oil in a large skillet over medium-low heat. Add the sliced onions and salt. Cook for 20–25 minutes, stirring every few minutes, until soft, deeply golden, and sweet. Stir in the Worcestershire sauce during the final minute, if using. Transfer to a bowl.
Prepare the beef patties. In a bowl, gently combine the ground beef, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Divide into four thin patties shaped to fit your bread.
Cook the patties. Heat a skillet over medium-high heat and add a little oil if needed. Cook the patties for approximately 3–4 minutes per side, depending on thickness, until browned and cooked through to an internal temperature of 160°F. Transfer to a plate.
Mix the optional sauce. Whisk together the mayonnaise, ketchup, mustard, chopped pickles, and smoked paprika until smooth. Set aside.
Assemble the sandwiches. Butter one side of each bread slice. Place four slices butter-side down. Add a slice of Swiss cheese, a beef patty, a generous portion of caramelized onions, a slice of cheddar, and another slice of Swiss cheese. Spread a little sauce on the inside of the remaining bread slices, if desired, and place them on top with the buttered side facing outward.
Grill the patty melts. Heat a clean skillet or griddle over medium-low heat. Cook each sandwich for 3–5 minutes per side, pressing gently with a spatula, until the bread is crisp and golden and the cheese is completely melted.
Rest and serve. Transfer the sandwiches to a cutting board and let them rest for 1–2 minutes. Cut diagonally and serve hot while the cheese is still gooey.
Notes
Cook the onions slowly: Lower heat develops their sweetness without burning them.
Shape thin patties: Thin patties fit the bread better and make the sandwich easier to bite into.
Use a cheese combination: Swiss adds classic patty melt flavor, while cheddar brings extra richness.
Keep the heat moderate: Medium-low heat allows the cheese to melt before the bread becomes too dark.
Don’t skip the butter: Buttered bread creates the signature crispy, golden diner-style crust.
