2 cups cooked white rice
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
8 ounces mushrooms, sliced
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 cup vegetable broth
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup milk
1 large egg
1/4 cup fresh parsley, chopped (optional)
Instructions
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
Add the minced garlic and sliced mushrooms to the skillet. Cook for an additional 5-7 minutes until the mushrooms are tender and any liquid has evaporated.
Stir in the dried thyme, salt, and black pepper. Remove from heat and let cool slightly.
In a large bowl, combine the cooked rice, mushroom mixture, vegetable broth, cheddar cheese, Parmesan cheese, milk, and egg. Mix well until all ingredients are evenly incorporated.
Pour the mixture into the prepared baking dish and spread it evenly.
Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
Remove from the oven and let cool for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
For a heartier dish, add cooked chicken or sausage to the mixture before baking.
Substitute brown rice for white rice for added fiber and a nuttier flavor.
