A delicious and easy-to-make Cheesy Beef Puff Roll Bake that combines savory ground beef with melted cheese wrapped in flaky puff pastry.

Ingredients

Scale
  • 1 lb (450 g) lean ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp tomato paste
  • 2 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • ½ cup diced bell peppers (optional)
  • 2 tbsp chopped fresh parsley
  • 1½ cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 oz (55 g) cream cheese, softened (optional)
  • 2 sheets frozen puff pastry, thawed
  • 1 large egg
  • 1 tbsp water
  • 2 tbsp unsalted butter, melted
  • 1 clove garlic, minced
  • 1 tbsp chopped parsley
  • 2 tbsp grated Parmesan cheese

Instructions

  1. Prepare the Filling: Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for 30 seconds. Add the ground beef and cook until browned, breaking it into small pieces. Drain any excess grease. Stir in the Italian seasoning, smoked paprika, onion powder, garlic powder, salt, and pepper. Mix in the tomato paste, ketchup, Worcestershire sauce, and bell peppers (if using). Cook for 2–3 minutes until everything is well combined. Remove from the heat and stir in the parsley. Let the filling cool for 10 minutes.
  2. Assemble the Roll: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Roll each puff pastry sheet slightly to smooth the seams. Divide the beef mixture evenly between the two sheets, leaving a 1-inch border. Top with the mozzarella, cheddar, and small dollops of cream cheese. Roll each pastry tightly into a log, seam-side down. Pinch the ends closed.
  3. Egg Wash: Whisk together the egg and water. Brush the tops of the pastry rolls with the egg wash. Cut a few small slits in the top to allow steam to escape.
  4. Bake: Bake for 30–35 minutes, or until the pastry is puffed and deep golden brown.
  5. Garlic Butter Finish: While the rolls are baking, combine the melted butter, garlic, parsley, and Parmesan cheese. As soon as the rolls come out of the oven, brush them generously with the garlic butter mixture.
  6. Serve: Let the rolls rest for 5–10 minutes, then slice into thick portions.

Notes

  • For a spicier kick, add some red pepper flakes to the beef mixture.
