2 cups all-purpose flour
1 teaspoon salt
1 tablespoon sugar
1 packet (2 1/4 teaspoons) active dry yeast
3/4 cup warm milk (about 110°F)
2 tablespoons unsalted butter, melted
1 large egg
1 pound ground beef
1 cup mashed potatoes (prepared)
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1 tablespoon olive oil
1 egg (for egg wash)
Instructions
In a large bowl, combine the flour, salt, sugar, and yeast. In a separate bowl, mix the warm milk, melted butter, and egg. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
While the dough is rising, heat olive oil in a skillet over medium heat. Add the ground beef, garlic powder, onion powder, and black pepper. Cook until the beef is browned and cooked through, about 5-7 minutes. Drain excess fat if necessary. Remove from heat and let cool slightly.
Preheat the oven to 375°F. Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about 1/4 inch thick.
Spread the mashed potatoes evenly over the dough, leaving a small border around the edges. Top with the cooked beef mixture and sprinkle with shredded cheddar cheese.
Starting from one long side, carefully roll the dough into a log. Pinch the edges to seal. Cut the log into 8 equal pieces and place them cut side up in a greased baking dish.
Beat the additional egg and brush it over the tops of the rolls. Bake for 25-30 minutes or until golden brown.
Allow the rolls to cool for a few minutes before serving. Enjoy warm!
Notes
For a spicier kick, add diced jalapeños to the beef mixture.
Substitute ground turkey or chicken for a lighter version of the filling.
