1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
4 large flour tortillas
1/4 cup vegetable oil (for frying)
Sour cream, for serving
Salsa, for serving
Instructions
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2 minutes to combine the flavors.
Remove the skillet from heat and mix in the shredded cheddar and Monterey Jack cheeses until melted and well combined.
Lay a tortilla flat on a clean surface. Spoon about 1/2 cup of the beef and cheese mixture onto the center of the tortilla.
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top, sealing the edges. Repeat with the remaining tortillas and filling.
In a large skillet, heat the vegetable oil over medium-high heat. Carefully place the chimichangas seam-side down in the hot oil. Fry for about 3-4 minutes on each side until golden brown and crispy.
Remove the chimichangas from the oil and place them on a paper towel-lined plate to drain excess oil.
Serve hot with sour cream and salsa on the side.
Notes
For a spicier version, add diced jalapeños to the beef mixture or serve with hot salsa.
Try using shredded rotisserie chicken or black beans instead of ground beef for a different protein option.
