1 lb ground beef
1 large egg
½ cup breadcrumbs
¼ cup milk
¼ cup finely chopped onion
2 cloves garlic, minced
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
4 oz cheddar cheese, cut into small cubes
¼ cup ketchup, for topping
1 tbsp brown sugar
1 tsp yellow mustard
Instructions
Preheat oven to 400°F (200°C). Grease a mini muffin pan or line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, egg, breadcrumbs, milk, onion, garlic, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until just combined.
Take a small portion of the meat mixture and flatten it in your hand. Place a cube of cheddar in the center and wrap the meat around it, sealing completely.
Place each meatloaf morsel in the prepared pan.
Mix ¼ cup ketchup, brown sugar, and mustard. Brush a little over each morsel.
Bake for 15–18 minutes, or until the beef reaches 160°F (71°C) internally.
Brush with the remaining glaze and bake for another 2–3 minutes.
Let rest for 5 minutes before serving.
Notes
For a spicier version, add some chopped jalapeños to the meat mixture.
These morsels can be made ahead of time and frozen before baking.
Serve with your favorite dipping sauces for added flavor.
