- 8 ounces rotini pasta
- 1 pound lump crab meat
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/2 cup green onions, sliced
- 1/4 cup celery, diced
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon Cajun seasoning
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, crab meat, cherry tomatoes, red bell pepper, green onions, and celery.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, Cajun seasoning, lemon juice, salt, and pepper until smooth.
- Pour the dressing over the pasta and crab mixture, gently tossing to combine until everything is evenly coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad a gentle stir and garnish with fresh parsley.
Notes
- For added crunch, consider mixing in some diced cucumbers or shredded carrots.
- If you prefer a spicier kick, increase the Cajun seasoning or add a few dashes of hot sauce to the dressing.
