  • ½ cup brown sugar, packed
  • ¼ cup soy sauce
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • ½ teaspoon black pepper
  • 2 tablespoons vegetable oil
  • Chopped green onions for garnish (optional)

Instructions

  1. In a medium bowl, combine the diced pineapple, brown sugar, soy sauce, apple cider vinegar, minced garlic, ground ginger, and black pepper. Mix well to create a marinade.
  2. Place the pork chops in a large resealable plastic bag or shallow dish. Pour the marinade over the pork chops, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for more flavor.
  3. Preheat your grill or a large skillet over medium-high heat. Add the vegetable oil.
  4. Remove the pork chops from the marinade, allowing excess marinade to drip off. Reserve the marinade for later use.
  5. Grill the pork chops for about 6-7 minutes on each side, or until they reach an internal temperature of 145°F. If using a skillet, cook for the same amount of time, flipping once.
  6. While the pork chops are cooking, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat and let it simmer for about 5 minutes to thicken slightly.
