2 salmon fillets (about 6 ounces each)
1 cup fresh peaches, pitted and sliced
1/4 cup bourbon
2 tablespoons brown sugar
1 tablespoon soy sauce
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a medium bowl, combine the bourbon, brown sugar, soy sauce, Dijon mustard, garlic powder, onion powder, salt, and black pepper. Whisk until well blended.
Place the salmon fillets on the prepared baking sheet, skin-side down. Drizzle the olive oil over the fillets and rub it in gently.
Pour half of the bourbon mixture over the salmon, spreading it evenly. Arrange the peach slices on top of the salmon.
Drizzle the remaining bourbon mixture over the peaches.
Roast the salmon in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
Notes
For a spicier kick, add a pinch of red pepper flakes to the bourbon mixture.
Serve with a side of quinoa or a fresh green salad for a complete meal.
