1 pound ground beef
1 cup cooked bacon, chopped
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 large egg
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheddar cheese
1/2 cup bourbon BBQ sauce
1 tablespoon olive oil
Instructions
Preheat your oven to 400°F.
In a large bowl, combine the ground beef, chopped bacon, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until just combined, being careful not to overwork the meat.
Form the mixture into meatballs, about 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.
Use your thumb to create a small indentation in the center of each meatball. Fill the indentation with a small amount of shredded cheddar cheese, then cover the cheese with a bit of the meat mixture to seal it in.
Drizzle the olive oil over the meatballs and bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and reach an internal temperature of 160°F.
During the last 5 minutes of baking, brush the bourbon BBQ sauce over the meatballs. Return to the oven and bake until the sauce is bubbly and caramelized.
Let the meatballs cool for a few minutes before serving.
Notes
For added flavor, try mixing in some diced jalapeños or a splash of Worcestershire sauce into the meat mixture.
You can also serve the meatballs on slider buns with additional BBQ sauce and pickles for a fun twist.
