Ingredients

Scale
  • 1 1/2 lb beef sirloin, thinly sliced into strips
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, thinly sliced
  • 8 oz cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 3/4 cup sour cream
  • 1 tablespoon chopped fresh parsley, optional
  • 1 1/2 cups crispy fried onions
  • 1 tablespoon grated Parmesan cheese, optional
  • 1/2 teaspoon paprika, optional
  • 12 oz egg noodles, cooked according to package directions

Instructions

  1. Prepare the beef: Pat the beef dry, slice thinly, season, and sear in batches.
  2. Cook the mushrooms and onions: Sauté onions, add mushrooms, and cook until browned.
  3. Make the creamy sauce: Sprinkle flour, add broth, Worcestershire sauce, and mustard, then simmer.
  4. Finish the stroganoff: Return beef, simmer, add sour cream, and adjust seasoning.
  5. Prepare the crispy onion topping: Combine crispy onions with Parmesan and paprika, warm if desired.
  6. Assemble and serve: Serve stroganoff over noodles, top with crispy onions and parsley.

Notes

  • Choose tender beef: Sirloin or tenderloin works well.
  • Slice against the grain for tenderness.
  • Brown in batches to avoid steaming.
  • Add sour cream last to prevent curdling.
  • Keep topping crunchy by adding just before serving.
  • Greek yogurt can substitute sour cream.
