700 g beef stew meat, cut into bite-size pieces
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
2 carrots, sliced
200 g mushrooms, sliced
2 tbsp tomato paste
500 ml beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
1 tsp paprika
1 tsp salt
½ tsp black pepper
800 g potatoes, peeled and thinly sliced
2 tbsp melted butter
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
100 g shredded cheddar cheese
50 g grated Parmesan cheese
Instructions
Preheat your oven to 190°C. Lightly grease a 23 × 33 cm baking dish.
Heat olive oil in a large oven-safe skillet over medium-high heat. Season the beef with salt and pepper and brown it in batches for 3–4 minutes per side. Transfer to a plate.
In the same skillet, add the onion and carrots. Cook for 4–5 minutes. Add the mushrooms and cook for another 3 minutes. Stir in the garlic and tomato paste and cook for 1 minute.
Return the beef to the skillet. Add beef broth, Worcestershire sauce, thyme, rosemary, paprika, and remaining salt and pepper. Bring to a simmer and cook for 10–15 minutes, allowing the sauce to reduce slightly.
Toss the sliced potatoes with melted butter, garlic powder, salt, and black pepper.
Transfer the beef mixture to the baking dish. Arrange the potato slices evenly over the top, slightly overlapping them.
Sprinkle the cheddar and Parmesan over the potatoes.
Cover with foil and bake for 35 minutes. Remove the foil and continue baking for 20–25 minutes, until the potatoes are tender and golden and the cheese is bubbling.
Let the casserole rest for 10 minutes before serving.
Notes
Add 150 g frozen peas to the beef filling.
Add corn for a sweeter flavor.
Replace cheddar with Gruyère or mozzarella.
Add a layer of cream sauce for an extra-rich casserole.
Sprinkle crispy fried onions over the top before serving.
Slice the potatoes as evenly and thinly as possible so they cook at the same rate. If your potato slices are thicker, parboil them for 5–7 minutes before assembling the casserole.
