Beef & Broccoli Pineapple Stir-Fry: A Tasty Twist!

A delicious and unique stir-fry combining tender beef, fresh broccoli, and sweet pineapple, perfect for a quick weeknight dinner.

  • pounds flank steak or sirloin, thinly sliced against the grain
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 4 cups broccoli florets
  • 1 cup carrots, sliced on the diagonal
  • 1 cup fresh pineapple chunks
  • ½ medium onion, cut into chunks
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • ⅓ cup low-sodium soy sauce
  • ¼ cup beef broth
  • 2 tablespoons oyster sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)
  • Crushed red pepper flakes (optional)

Instructions

  1. In a bowl, combine the beef with the cornstarch, soy sauce, sesame oil, and black pepper. Let marinate for 15 minutes.
  2. Whisk together the soy sauce, beef broth, oyster sauce, brown sugar, honey, rice vinegar, sesame oil, cornstarch, and water. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Cook the beef in batches for 2–3 minutes, until browned. Remove and set aside.
  4. Add the remaining tablespoon of oil. Stir-fry the broccoli and carrots for 3–4 minutes. Add the onion, garlic, and ginger. Cook for 1 minute. Stir in the pineapple and cook for another 1–2 minutes.
  5. Return the beef to the skillet. Pour in the prepared sauce. Stir continuously for 2–3 minutes, until the sauce thickens and coats the beef and vegetables.
  6. Garnish with sesame seeds, green onions, and crushed red pepper flakes if desired. Serve over steamed jasmine rice, brown rice, fried rice, lo mein, or rice noodles.

Notes

  • Store in an airtight container in the refrigerator for up to 4 days.
  • Freeze for up to 2 months (the broccoli may soften slightly after thawing).
  • Reheat in a skillet over medium heat with a splash of beef broth or water until heated through.
