1 pound ground beef
1/2 cup breadcrumbs
1 large egg
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup BBQ sauce (plus extra for drizzling)
8 ounces elbow macaroni
2 cups chicken broth
1 cup shredded sharp cheddar cheese
1/2 cup ranch dressing
1 tablespoon olive oil
1/4 cup chopped green onions (for garnish)
Instructions
In a large bowl, combine the ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined. Form the mixture into 1-inch meatballs.
In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook for about 5-7 minutes, turning occasionally, until browned on all sides.
While the meatballs are cooking, bring a pot of salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
Once the meatballs are browned, add the chicken broth and BBQ sauce to the skillet. Bring to a simmer, then add the cooked macaroni and ranch dressing. Stir until everything is well combined.
Sprinkle the shredded cheddar cheese over the top of the mixture. Cover the skillet and let it cook for an additional 5 minutes, or until the cheese is melted and bubbly.
Remove from heat and drizzle with extra BBQ sauce. Garnish with chopped green onions before serving.
Notes
For a healthier option, substitute ground turkey or chicken for the ground beef.
