Ingredients

Scale
  • 2 lb ground beef
  • 8 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup finely diced yellow onion
  • 3 cloves garlic, minced
  • 1/4 cup barbecue sauce
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup barbecue sauce (for glaze)
  • 2 tablespoons ketchup (for glaze)
  • 1 tablespoon brown sugar (for glaze)
  • 1 teaspoon Worcestershire sauce (for glaze)
  • 1 teaspoon yellow mustard (for glaze)
  • 1/2 cup shredded cheddar cheese (optional topping)
  • 2 slices cooked bacon, crumbled (optional topping)
  • 2 tablespoons chopped fresh parsley or green onions (optional topping)

Instructions

  1. Preheat the oven to 350°F. Line a rimmed baking sheet with foil or lightly grease a 9-by-5-inch loaf pan.
  2. Cook the bacon in a skillet until crispy. Drain on paper towels, let cool, and crumble into small pieces.
  3. In a large bowl, combine the ground beef, breadcrumbs, eggs, milk, onion, garlic, barbecue sauce, mustard, Worcestershire sauce, smoked paprika, onion powder, salt, and pepper. Mix gently until just combined.
  4. Fold in the crumbled bacon and shredded cheddar cheese, distributing them evenly throughout the mixture.
  5. Transfer the mixture to the prepared baking sheet and shape it into a loaf about 9 inches long, or press it into the prepared loaf pan.
  6. In a small bowl, whisk together the barbecue sauce, ketchup, brown sugar, Worcestershire sauce, and mustard.
  7. Brush half of the glaze over the top and sides of the meatloaf. Bake for 45 minutes.
  8. Spread the remaining glaze over the meatloaf and continue baking for another 15–25 minutes, until the center reaches 160°F.
  9. If desired, sprinkle additional cheddar cheese and cooked bacon over the top during the final 5 minutes of baking.
  10. Let the meatloaf rest for 10 minutes before slicing. Garnish with parsley or green onions and serve warm.
