3 large yellow onions
1 lb ground beef
6 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 large egg
½ cup breadcrumbs
2 tablespoons ketchup
1 tablespoon yellow mustard
1 teaspoon Worcestershire sauce
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
½ cup mayonnaise
¼ cup sweet chili sauce
1 tablespoon sriracha, or to taste
1 tablespoon ketchup
1 teaspoon honey
1 teaspoon lime juice
Instructions
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Prepare the onions: Cut off the top and bottom of each onion and carefully peel away the outer layers. Separate the onion into individual shells, keeping the larger outer layers intact. You’ll need about 12 onion shells.
Make the burger filling: In a large bowl, combine ground beef, half of the cooked bacon, ½ cup cheddar cheese, egg, breadcrumbs, ketchup, mustard, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
Stuff the onions: Place one onion shell inside another to create a sturdy shell. Fill the center with the beef mixture, pressing gently to compact it. Continue until all the filling is used.
Bake: Arrange the stuffed onions on the prepared baking sheet. Bake for 30–35 minutes, or until the beef reaches 160°F internally.
Add cheese and bacon: Sprinkle the remaining cheddar and bacon over each onion bomb. Return to the oven for 3–5 minutes, until the cheese is melted.
Make the bang bang sauce: Whisk mayonnaise, sweet chili sauce, sriracha, ketchup, honey, and lime juice together until smooth.
Finish: Drizzle the bang bang sauce generously over the hot onion bombs. Serve immediately with extra bang bang sauce for dipping.
Notes
Use large yellow or sweet onions because their outer layers are easier to separate.
Don’t pack the beef too tightly or the onion bombs can become dense.
For extra caramelized edges, broil for 1–2 minutes at the end, watching carefully.
You can add diced pickles to the beef mixture for an extra cheeseburger flavor.
