2 ripe bananas, mashed
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1 cup chopped pecans
1 cup caramel sauce (store-bought or homemade)
Instructions
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the mashed bananas, eggs, and vanilla extract to the butter mixture, and mix until well combined.
In another bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.
Fold in the chopped pecans gently.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Once cooled, drizzle the caramel sauce over the top of the cake before serving.
Notes
For added flavor, consider mixing in 1/2 teaspoon of cinnamon or nutmeg into the dry ingredients.
If you prefer a more decadent dessert, top the cake with whipped cream or serve with a scoop of vanilla ice cream.
